Environment variables are created to allow MS-DOS batch files and VBScript files to access image and backup files created after the backup has completed. They are only there to persist after the backup and have no purpose during the backup. An example of their usage can be seen here:

Volatile environment variables only exist for the current user in the current Windows session, it doesn't matter whether the user is an Admin or not. They are always deleted on reboot.
If you are creating backup sets with many increments then this can create a lot of variables because each backup creates a variable for all files involved in the set. I notice that the OP had at least 291 incremental images in one set.
Older versions of Reflect would retain information on the last 5 backups in the current Windows session. Macrium Reflect v5.0.3940 and later store only the most recent backup.
